Butter Tart Squares

If you find butter tarts too time-consuming try this butter tart square recipe which is a quick one to make. You do have to wait to eat them, as it takes time to set the topping. They are worth the wait and will satisfy your craving for the butter tarts. These squares are great to make ahead and bring to a gathering as your contribution. The sticky gooey topping on the shortbread bottom makes them an all-time favorite. These are also great for bake sales.  For an adult version, you could soak your raisins overnight in a 1/4 cup of rum.  What you need: 9x13 baking pan, bowls for mixing, parchment paper and spatulas. Rosemary Potato Bread or Chive and Potato Bread: your choice

 One of my favourite loaves of bread is Potato Rosemary. Sometimes it is the same recipe using chives in place of rosemary. This bread does require a bit of planning because it uses a preferment called Biga. Basically, a type of dough made ahead of time to enhance flavours of the main dough. Preferments include biga, poolish and the infamous sourdough or levain.  I am a lazy bread baker and although I love the flavours sourdough evokes I don't love taking care of it. Biga and poolish are shorter-term preferments. I consider the comparison of the preferments similar to a house guest who you love to come and visit, entertain and enjoy each other's company. If they stay too long it begins to get uncomfortable. You still need to get on with day-to-day living. You still love your company, you just don't have the energy to continue entertaining after a couple of weeks.  Butter tart squares are equally yummy to a butter tart. The great thing about them is they take less time to make. Time is such a precious commodity these days that any time you can imitate delicious baking for less time it makes so much sense to go with it. These little squares take very little time to put together and bake but, there is a but, you need to wait overnight to cut them to prevent gooeyness. Plan ahead if you want to impress your friends and family, I guarantee accolades. Sometimes people just want a recipe and are bored with a back story because they need the recipe.  I prefer that too! Chocolate Chip Cookies

  Even when you say, "chocolate chip cookie" a chorus of orchestral musical sound comes though my brain. It is the most favorite cookie of all time. At the Heritage Farm Market this cookie sold out 90% of the time. It was the hot humid days that people went to the beach or ran through a hose in the yard to stay cool, when a few of these cookies made it back home at the end of the market.  Definately a favorite with children, who chose the chocolate chip cookie over the others. Holy Jalapeno Cheese Bread

  Holy Jalapeno Cheese Bread This is such a soft tasty loaf of bread. It could be made as a cheese bread if jalapenos are not your thing. I come from a family of 10. Mom struggled every day trying to find ways to feed us and the only spices we had in the house were turkey dressing spices, cinammon, nutmeg and cloves. Of course we had salt and pepper seasoning which made all the meat, potatoes, macaroni or kraft dinner tasty. As an adult living in the Halifax/Dartmouth area I finally tried jalapeno peppers on a plate of nachos at the restaurant called "The Thirsty Duck" (no longer in existence). It was my nursing class, after exam, celebration spot to go. It took several tries before acquiring a taste for the peppers. Once you do enjoy the taste of jalapenos this loaf of bread will give you just another chance to enjoy and celebrate any ol' accomplishment you choose.
