Easy SUGAR COOKIE RECIPE

One of the easiest recipes for sugar cookies ever. You don't have to refrigerate the dough before you roll and make your cookies. It is actually recommended not to. They are also so very versatile. If you need a maple cookie for Canada Day or a maple celebration, simply substitute the vanilla for maple extract you will have the flavour. If you want a sandwich maple you can easily add a maple flavoured buttercream between two single cookies. Imagine a coffee buttercream between two chocolate cookies. Yum!! Another type I have baked is a strawberry filling between a vanilla and chocolate cookie to make a delectable Neapolitan cookie.
This recipe was sent to me by my sister-in-law, Laurie. She, by the way, is a fabulous cookie artist. If you make them please leave a comment.

1 egg                                                     1                                1

Vanilla                                                  2 tsp                         ½ tsp + 1 Tbsp strong coffee

Baking powder                                    2 tsp                         1 tsp baking powder + ½ tsp baking soda

Flour                                                    3 cups                       2 1/4 cup Flour and  3/4 cup cocoa

Semi-sweet Chocolate                                                        2 sq semi sweet melted choc

Directions

1.       Cream the butter and sugar until it is completely mixed.  Do not over-mix.

2.      Add vanilla and eggs and mix until completely incorporated. If chocolate version add 1 tbsp strong coffee and melted 2 sq chocolate.

3.      Add Baking Powder and mix. If chocolate add the baking soda.

4.      Mix in the flour two cups at a time. (If choc include the cocoa to flour).

5.      Do not chill the dough; the cookies will bake better if the dough is at room temperature.

6.      Roll a handful of the dough out on a prepared surface until it’s about 3/8″ thick and cut out shapes with a cookie cutter.

7.      Bake at 350 degrees for 6-8 minutes depending on the size of the cookie.  Do not over-bake, edges should  be slightly brown.

If you love to decorate cookies these are the perfect palate for flooding and cookie design.
