Banana Chocolate Chip Muffins

   This recipe came from one of those cookbooks that go for sale to raise funds that mom had. The cover is no longer on the book but it did contain most of this recipe. Finding a great banana bread recipe is like finding a shiny coin while out walking.When it turns out perfectly an instant grin spontaniously forms on your face and you have no control over your glee. This one is the shiny coin.

For this recipe you can add walnuts, chocolate chips or leave plain. Make muffins or banana bread. If you choose to make muffins you increase the temperature and bake for less time. If you are making the banana bread the temp is 350F for 40 -50 minutes. Most of the quick bread recipes can be either in loaf or muffin form.

For these muffins I had a bucket full of mini chocolate chips and really want to use them up. They work perfectly here but there is a saying, "go big or go home". Which means regular size chocolate chips will do just fine. I am a walnut fan and would not hesitate to put them in as well. 

Banana muffins or Banana Bread

For bread 350F 40 to 50 minutes and for muffins 400F 25-35 or until toothpick comes out clean.                                    

All purpose Flour                                                         1 3/4 cup/210g             

Baking powder                                                            2 tsp/8g                      

Baking soda                                                                1/4 tsp/1g                     

Salt                                                                              1/2 tsp/3g   

Cinnamon    (opptional)                                              1/2tsp /1 gm             

Butter warmed                                                           1/3 cup/84g               

Granulated sugar                                                        2/3 cup/134g             

Eggs (lg.) well beaten                                                 2                                 

Mashed medium bananas                                           1 cup (2-3bananas)    

Chocolate chips  (opptional)                                      1 cup                                                        

Method

1.      Beat butter until creamy.

2.      Add eggs and beat until light and fluffy, mix in bananas.

3.      Sift dry ingredients together and add to wet.

4.      May add a cup of chocolate chips or walnuts if desired. 

 5. Scoop into a prepared muffin tin 3/4 full and add a streusel topping if desired.        

 6.  Bake as directed above. 

 7. Leave in the tray for a couple of minutes before removing to a cooling rack.

         Streusel Topping

       Use one part sugar (1/2 cup) to one part (1/2 cup) barely melted butter and one and a half part (3/4 cup) flour. You can use a combination of granulated and brown or just one or the other of the sugars. Add a pinch of salt if you use unsalted butter.

         Bakers muffin tips

 1. Mix and leave batter covered in the fridge overnight. Bake the next day.          

 2. Use a big scoop and large tulip cup shape muffin holders to make 9 muffins or double the recipe for 18 muffins.
