Amazing Basic Sandwich Cookies
The people who know me might know that I have been known to look for second hand cookbooks. Usually they are inexpensive and have the most interesting ideas. I found one such treasure, "Cooking a Common Sense Guide" published 2003 by Bay Books. New South Wales. I have a photo of the cookbook.
It has no nonsence easy to read recipies. Except if you live in one part of the world and things are called something else where the book is published. Or if they use ingredients you are not familiar with.
For example a red capsican is a red pepper. It is always fun to learn something new so now I know red pepper has another name.
I don't like to spend a long time on a blog post so here is the main recipe for the cookie. The only substitution was the self rising (SR) flour. Originally calling for 1 cup of all purpose and 1 cup of self rising. I will be putting 2 cups of all purpose (AP) flour and adding the baking powder and salt.
The formula is, 1cup SR flour = 1 cup AP flour +1 1/2 tsp baking powder + 1/2 tsp salt
Make caster sugar by pulsing regular sugar in a food processor
Butter 125 gms (1/2 cup)
Caster Sugar 125 gms (1/2 cup + tablespoon)
Vanilla 1/4 tsp
All Purpose Flour 250 gms (2 cups)
Baking Powder 1 1/2 tsp
Salt 1/2 tsp
Preheat oven to 315F or try 300F with fan or convection.
1. Cream together butter and sugar
2. Beat in egg
3. Add vanilla
4. Sift dry ingredients together
5. Incorporate dry to butter/egg misxture
6. Roll dough 1/4 inch thick. You can use baking paper to roll dough between two sheets.
7. Use cutters to shape then place on parchment lined baking sheet. They will need a little space between but do not spread much. You can also use something to create an impression on half of the cookies. I used a piping tip, both sides to make a large and small circle. Also had a small cutter to make the other shape. Just make sure to not press too hard.
8. Bake about 12-15 mins until cookie is firm with slight golden color to edge of cookie.
9. Create a filling to spread on one side and place together once cooled.
For the above cookies I used an American orange flavoured buttercream for half of the cookies and put 100g of confectioners sugar with 50g of unsalted butter together with a couple heaping tablespoons of Nutella.
See the plate under the cookies. It was past down to me from my mother and was my grandmothers. I notice the show Mary's Kitchen Crush, uses the plate for her intro. Fun to know we have something in common.
